Although Colombian by birth, my culinary journey took on an international flavor early on. At 17, I left home, experiencing life and cuisines in various countries, including the USA and Argentina. These experiences would later infuse my cooking style with a unique, global perspective.

Finally, in 2006, I took the plunge and enrolled in culinary school in Argentina. Eager to immerse myself in the culinary world, I immediately secured an internship at a renowned Buenos Aires restaurant. This was my first true encounter with a professional kitchen – a far cry from cooking for friends and family.

At the age of 23, I embraced the role of fatherhood, a transformation as profound as any culinary technique I had learned. This new chapter in my life led us to a change of scenery – the beautiful land of Ecuador, my partner’s home country.
